only in the remote villages of France. Our farm is located in a small Hudson Valley village, just two hours outside of New York City. Add the peppers and cook over moderately high heat, stirring occasionally, until they start to brown, about 8 minutes. Add the vinegar and cook over low heat until the peppers are tender, about 10 minutes. Season with salt and pepper and transfer to a bowl. &lt;br /&gt;2.Prepare a bowl of ice water. Cook the 4 pizza rounds for 30 seconds on each side. Remove from the heat and set aside. &lt;br /&gt;Preheat the oven to 500° F. Wash the asparagus and place on a lightly oiled baking sheet. Roast the asparagus in the hot oven until charred, about 9 minutes. Remove from the oven. When the asparagus are cool enough to touch, cut each stalk into 3 pieces. &lt;br /&gt;In a small bowl, mix the goat cheese and olive oil. Divide the goat cheese mixture between the 4 pizzas, making sure to leave a 3/4-inch rim around the pizza for the crust. Smooth the goat cheese so that the topping is only 1/8- to 1/4-inch thick. Scatter the asparagus over the pizzas and cook the pizzas on the griddle until the dough is done, but not brown, about 3 1/2 minutes. They believe the food they serve should be equal to the most exciting and innovative restaurants in NYC. We had the pleasure to meet Brian Holbach the Lead Chef for Creative Edge Parties and interview him.&lt;br /&gt;&lt;br /&gt;We met Chef Brian following a luncheon last month. This luncheon featured many Dutch foods at the New Amsterdam Day Festivals. Chef Brian featured our Coach Farm Goat cheeses at the event. &lt;br /&gt;&lt;br /&gt;Brian knew at 14 years old he had the natural skills for cooking and passion for the culinary world. &lt;br /&gt;&lt;br /&gt;CF- What inspired you to be a chef? &lt;br /&gt;&lt;br /&gt;BH-I started young my first job was when I was 14, years old. I loved everything about the culinary world and why not do what you love. &lt;br /&gt;&lt;br /&gt;CF- What was your first job in the food world?&lt;br /&gt;&lt;br /&gt;BH- A dishwasher.&lt;br /&gt;&lt;br /&gt;CF-When were you first introduced to Coach Farm Cheeses?&lt;br /&gt;&lt;br /&gt;BH- My first job was at Local Vintage, they introduced me to your cheeses and I fell in love!&lt;br /&gt;&lt;br /&gt;CF- What is your favorite application of Coach Farm Goat Cheeses?&lt;br /&gt;&lt;br /&gt;BH- Goat Cheese Tart, Caramelized Onions, Candy Pecans and for dessert Goat Cheese Cake.&lt;br /&gt;&lt;br /&gt;CF- How has the local food movement changed the way you cook?&lt;br /&gt;&lt;br /&gt;BH- It placed more emphasis on the ingredient it heightens the respect on whatever ingredient you feature, I love using Fresh Organic local delivery right from the farms you can't duplicate what nature can do.&lt;br /&gt;&lt;br /&gt;CF- What is your favorite childhood meal?&lt;br /&gt;&lt;br /&gt;BH- Spaghetti and meatballs just like my mom use to make me make her.&lt;br /&gt;&lt;br /&gt;CF-What is in your fridge right now? &lt;br /&gt;&lt;br /&gt;BH- Corn, all kinds of variety of potatoes. Coach Farm Goat Cheeses of course. Natural grass feed beef, apples, local honeys all kinds of fall produce because I know its coming.&lt;br /&gt;&lt;br /&gt;CF-One thing you can't live without?&lt;br /&gt;&lt;br /&gt;BH- Coffee and a knife I can do allot with a knife.&lt;br /&gt;&lt;br /&gt;CF-What are your plans for the future?&lt;br /&gt;&lt;br /&gt;BH- Developing my craft and taking time to travel I have a trip planned to Asia it &lt;br /&gt;&lt;br /&gt;should be great.&lt;br /&gt;&lt;br /&gt;CF-Do you ever use cookbooks?&lt;br /&gt;&lt;br /&gt;BH-Yes absolutely all the time.&lt;br /&gt;&lt;br /&gt;CF- What is your favorite cookbook? &lt;br /&gt;&lt;br /&gt;BH- Culinary Artist, this book was kept right in their kitchen office. &lt;br /&gt;&lt;br /&gt;CF-Do you cook at home or do you get home after work and eat cereal for dinner? &lt;br /&gt;&lt;br /&gt;BH-50/50 &lt;br /&gt;&lt;br /&gt;After our interview we sampled some of their mouth watering appetizers we took many photos. Dampen them first, so the cheese won't stick.) Repeat with the rest of the cheese. You should have 8 patties. Place the bread crumbs on a plate, grind in some fresh black pepper, and stir to mix. Press the cheese patties into the crumbs until coated on both sides and around the edges.&lt;br /&gt;Place a heavy, nonstick skillet over medium heat for about 2 minutes. Add 1 tablespoon of olive oil, wait about 30 seconds, then swirl to coat the pan. Dutch ambassador to the United States Renée Jones-Bos and Parks Commissioner Adrian Benepe made the village's opening formal by cutting a Gouda cheese!&lt;br /&gt;&lt;br /&gt;As we mentioned earlier, the village consists of 12 traditional Dutch canal houses, a windmill, and a demonstration model of a contemporary Dutch greenhouse. Through Monday 14th, between 11am and 7pm, the public is able to sample and purchase sample and purchase Dutch agricultural products and foods, including stroopwafels, cheeses, herring sandwiches, dollar pancakes, cut flowers, flower bulbs and more. As a gift to our valued customer’s, we are delighted to offer you some great new recipes to try, share and cherish!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;BARBECUE PIZZA&lt;br /&gt;&lt;br /&gt;Pizza dough from dairy case&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 cup of Coach Farm’s fresh curd&lt;/div&gt;&lt;br /&gt;&lt;div&gt;2 very ripe tomatoes or sundried tomatoes&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Fresh basil leaves&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1/2 c. shredded Mozzarella cheese&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Olive oil&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Unroll pizza dough and brush one side with olive oil. Put in grill oil side down. Watch carefully so it doesn't burn. Just leave on until it begins to puff up 4-6 minutes. Remove from grill. Spread olive oil on other side. On cooked side spread goat cheese to cover entire surface area. Decorate with basil and tomato. Sprinkle with Mozzarella cheese. Could also add meat (i.e. shrimp, pepperoni). Continue baking or grill until cheese melts&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;CHICKEN BREASTS STUFFED WITH GOAT CHEESE AND BASIL&lt;br /&gt;&lt;br /&gt;4 boneless chicken breast halves, skinned&lt;/div&gt;&lt;br /&gt;&lt;div&gt;4 oz. Coach Farm medallion&lt;/div&gt;&lt;br /&gt;&lt;div&gt;2 green onions, thinly sliced&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3 basil leaves, shredded or 1 tsp. dried, crumbled&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 egg, beaten to blend&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1/2 c. dry bread crumbs&lt;/div&gt;&lt;br /&gt;&lt;div&gt;2 tbsp. unsalted butter, melted&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;Preheat oven to 350 degrees. Pound chicken between sheets of waxed paper to 1/4" thickness. Pat chicken dry.&lt;br /&gt;Combine cheese, green onions and basil in small bowl. Season with salt and pepper. Spread chicken mixture lengthwise over half of each chicken piece. Tuck short ends in. Roll chicken up, starting at one long side, into tight cylinders. Tie ends with string to serve. Dip chicken in egg, allowing excess to drip into bowl. Roll in bread crumbs, shaking off excess.&lt;br /&gt;Place chicken in an 8" square baking dish. Pour 2 tablespoons melted butter over. Bake until cooked through, about 20 minutes. Every so often she visits the U.S. and takes a trip back in time to Coach Farm where she helped Miles Cahn grow one of the first artisan goat cheese companies in the mid 1980s. Marie-Claude originally started out in Provence making goat cheese in her kitchen with the milk from her sixteen goats and little more to work with than a simple hand ladle and a few individual draining molds. Her traditional methods were taught here as she apprenticed our current cheesemaker (Rosie-shown on the left) for two years. Marie-Claude was very thankful to see not much has changed since she left here over twenty years ago. Five of us finally made it to the Red Devon in Bangall-the reformed Stage Stop restaurant. After a complete renovation the interior set the mood-with a handsome bar, autumn decorations and modern countryesque feel surrounding us. Before dinner we peaked in the market featuring anything you can think of from the surrounding area. They also have a delicious looking breakfast and lunch menu available daily. We've heard the omelette's are phenomenal!&lt;br /&gt;&lt;br /&gt;All of us started out with organic mixed greens from Sky Farms in Millerton. A lemon or hazelnut vinaigrette was offered and enjoyed by all. One diner selected the artisan cheese plate featuring an array of aged cheeses with a delightful cranberry chutney and their own baguette thinly sliced. Following our first course we enjoyed the mushroom and leak ravioli, pork belly and halibut. Everyone could not stop talking about the menagerie of flavors they discovered in every bite. The waitress came back to empty plates-we laughed when she asked how everything was!&lt;br /&gt;&lt;br /&gt;For dessert a few of us savored the chocolate mound and pear tart-just as phenomenal as dinner. Throughout the evening our server was attentive offering plenty of their artisanal breads and refilling water glasses. At this time they do not have their liquor license, but it is expected very shortly. Over $70,000 was raised for the Regional Food Bank of Albany.  The mansion was at its full capacity seating over 350 guests who wined and dined with local chefs creations from the area's harvest.  Guests had the chance to win beautiful artwork, dinner for 8 aboard a yacht with a local chef, even a hydroplane for two over Lake Geroge with a gourmet lunch!&lt;br /&gt;&lt;br /&gt;Thanks to everyone who attended and visited our tasting. It sounds like we have quite a few more fans in the capital region!  Also thanks to our local distributor, &lt;a href="http://www.adventureinfood.com/"&gt;Adventure in Food Trading&lt;/a&gt;, for having us.  Visit them in the Menand's Farmer's Market for great cheeses, meats and other adventurous delicacies! It says something when your cheese is preferred over a pair of Manolos!&lt;br /&gt;&lt;br /&gt;&lt;a href="http://rachelpink.typepad.com/rachelpinkridesthebus/"&gt;http://rachelpink.typepad.com/rachelpinkridesthebus/&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;September 19, 2008&lt;br /&gt;Cheese&lt;br /&gt;Murray's Cheese is as magical as a unicorn. &lt;br /&gt;&lt;br /&gt;It's got everything going for it. A perfect location. CHEESE. Olives of every ilk. CHEESE. Weird and special yogurt. CHEESE. Oh you get my drift.&lt;br /&gt;&lt;br /&gt;The thing is, I'm a little bit terrified of the cheese counter.Without hesitation I'll pick up off-the-shelf items like honey on the comb, artisinal butters and yogurts, small loaves of local bread, and other rare and special things. But pulling a number for service at the counter. . . I just can't do it. &lt;br /&gt;&lt;br /&gt;And that's why I have to call in my cheese husband, Vince. Lisa and Vince have perfect taste, and they always know a lot about the delicasies that rock. They've introduced me to truffle cheese, and Mrs. Quick's cheddar, and all kinds of Murray's delciousness. So when I get a hankering for a hunk of cheese, I ask Vince to come along. He knows the best cheesemongers and all the right questions to ask them. Tonight I wanted a goat cheese, and after answering 5 quick questions I came away with a perfect, mild, semi-soft goat cheese from Spain. Feeling brazen, I chose a tasty wedge of riccotta salata all on my own. &lt;strong&gt;Oh how I love living in a city where I can walk a few blocks, open a door, and have unlimited access to the world's very best cheese. Monday night you missed quite the feast! Restaurants, caterers, and local producers joined to offer a tasting of what the Columbia County area has to offer in the spirit of food, wine, and delicacies of the like.  &lt;br /&gt;&lt;br /&gt;Each chef prepared dishes comprised of the local, seasonal offerings.  Local wine and beer was provided by Hudson-Chatham Winery and Chatham Brewing.  &lt;br /&gt;&lt;br /&gt;Thanks to David at Bezalel Gables for preparing the beautiful foccacia boards topped with our fresh cheese on each table. Our friend Chuck Abraham of Old Saw Mill Farm in Germantown stopped in for a visit last week.  Chuck is a producer of all natural pork, chicken, lamb and fruit in Columbia County.  He was picking up some of our fresh logs, which were featured in the "Dinner with Hudson Valley Growers" at Bard College for Compass Group's annual culinary summit.  &lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.cgnad.com/default.asp"&gt;Compass Group&lt;/a&gt;, a nationwide food distribution company, was holding their annual culinary summmit in our neck of the woods.  Many of their meetings were held at the Culinary Institue of America (Hyde Park), while the real fun happened at local farms they visited.  The group was suppose to visit Coach Farm, but with a late start and an unexpected road block it didn't happen.  Instead the bus turned around and went back to &lt;a href="http://www.bard.edu/"&gt;Bard College&lt;/a&gt; for an amazing dinner prepared with all local ingredients.  We started with an asparagus salad featuring our goat cheese, &lt;a href="http://www.mountainfreshfarms.com/index.html"&gt;Mountain Fresh Farms&lt;/a&gt; tomatoes and chives.  Speaking of tomatoes.  If you are looking for safe (i.e. &lt;a href="http://www.poughkeepsiejournal.com/apps/pbcs.dll/article?AID=2008806110327"&gt;salmonella free&lt;/a&gt;) , local, hydroponic tomatoes try Mountain Fresh! They are by far one of the best tomatoes we have ever eaten!&lt;br /&gt;&lt;br /&gt;For the main course a series of "Farmer's Stations" were set up.  Everyone grabbed a bento style box and grabbed a few portions from each station.  Dishes ranged from grilled foie gras to lobster medallion with pommes frites. Our favories were the cedar wrapped free range chicken and the pan seared medallion of tenderloin... Let's just say we made more than one trip to each station!  Just when you thought you couldn't possibly eat anymore great food it was time for dessert.  A strawberry rhubarb tart was sent out featuring Storys and Tousey Farms product.  Make sure you try Ray Tousey's Cassis if you have the opportunity. Saturday Naomi was at Adam's in Poughkeepsie, NY while Julia was at King's in Hoboken, NJ, Yesterday Andrea was also doing a demo at the Honest Weight Food Coop in Albany.  We all had a great weekend and met some big fans of our cheese!  &lt;br /&gt;&lt;br /&gt;King's seemed to be the reduced fat haven while Triple Cream was flying out the door at Adam's in Poughkeepsie. Yesterday we had a great mix at the COOP.  All of the members that were working or shopping in the store were thrilled to have us.  Gustav and Chen do such a great job sampling out cheese- and getting people to buy it!  Gustav made an amazing melange of some interesting cheeses, grilled olives, gigantes and &lt;a href="www.chutneyunlimited.com/"&gt;Tanna's Garlic and Ginger Chutney&lt;/a&gt;. Local wineries and cheesemakers attended sampling their products (including our friends at &lt;a href="http://www.hudson-chathamwinery.com/index.html"&gt;Hudson-Chatham Winery&lt;/a&gt;!). Coach Farm sponsored a table (as well as the gift bags!).  Helena Christensen, Gwyneth Paltrow, and many others were awarded for their efforts in trying to end hunger in NYC.  It was an action packed evening with raffles, a live auction, great food and orange martinis.  The food was catered by Abigail Kirsch-featuring our cheese in a Zucchini Tartlet.  One of the highlights for the evening was Gwyneth snapping up $75,000 from the audience when she accepted her award, and then matching it! Our biggest accomplishment was winning the "Best of Class" award for our Triple Cream Wheel at the &lt;a href="http://www.wischeesemakersassn.org/wccc/2008/index.html"&gt;World Championship Cheese Contest&lt;/a&gt; in Wisconsin this March. Here we competed against many other soft ripened goat's milk cheeses. Along with our Triple Cream Wheel (99.6), our Green Peppercorn Pyramid (99.85) scored 5th place with our aged stick not too far behind.&lt;br /&gt;&lt;br /&gt;Our next race for the gold will be at the Fancy Food Show in New York this summer. Our Triple Cream wheel is one of the silver finalists for "Outstanding Cheese or Dairy Product".&lt;br /&gt;&lt;br /&gt;This past Friday we celebrated our award with a luncheon for the farm.
